So you want to learn how to make icing flowers? We’ve all admired those stunning cakes in the bakery window. The kind that are smothered in flowers and look too good to eat!

But learning how to make icing flowers seems like an impossible task when you have no experience and don’t know where to start.

A glance around a good kitchen supply shop reveals a plethora of equipment designed to help us learn how to make icing flowers.

Piping bags and special nozzles, shaped cutters for stamping flower shapes from roll out icing, special powdered colours to add realism to roses…the list goes on.

I’m going to explain how to make icing flowers which are simple and yet will look very effective on a birthday cake.

The prettiest daisy can be made by buying ready made fondant icing. This comes in an airtight package and is usually white in colour. You need to add concentrated colouring which is readily available in cake shops and some supermarkets.

Along with your colour paste and icing, you will need some flower shaped cutters which again are readily available online or in specialist shops. There are many shapes available, including daisies, poppies, leaves and individual rose petals so you can “build” a three dimensional rose.

To begin, sprinkle some icing sugar on your working area and unwrap your fondant icing and you’re ready to learn how to make icing flowers!

Start by kneading and working the fondant until it is pliable. Make a small pit in the centre of the ball of fondant and with a toothpick add a tiny dab of colour and work it right through the fondant until you have an even colour.

Always remember that with colouring, less is more; you can add more colouring but once it is in the fondant, it cannot be removed. Plan which colours you need for the chosen scheme and make enough of each colour to complete your designs…it’s very difficult to replicate a colour in a new batch of icing.

When you are happy with the colour, you can roll the icing out and begin to stamp out your flowers. Building layers of petals to create a three dimensional look or simply placing flat blooms onto your cake are both effective techniques.

Securing a flower to a cake surface can be done by mixing a little ordinary icing sugar and using it as “glue”. You can create the flower centres by rolling small balls of fondant icing and sticking them to your blooms. Remember to place leaves down before flowers for a natural look.

There are many other techniques for icing flowers, some of which take real skill with a piping bag and are perhaps best for the baker with a little more experience.

Once you have perfected your fondant flowers though, you will have a good understanding of the structure of flowers and this is the main point of learning how to make icing flowers.
